Coconut-Green Tea Crust for Salmon or Halibut

2 cups panko bread crumbs
3/4 cup unsweetened coconut flakes
1/2 cup crushed hazelnuts or macadamia nuts
1/2 cup unsalted butter, diced
2 Tbsp.neutral, good-quality green tea
1 Tbsp.kosher or sea salt
Freshly ground black pepper to taste
4 6-oz. filets of salmon or halibut

In a large bowl, mix all the ingredients except the fish.
Spread the mixture over the fish fillets and refrigerate for at least 30 minutes. Meanwhile, preheat the oven to 400 degrees.
Bake for 12 to 20 minutes (depending on your oven’s calibration and the thickness of the fish) until it flakes easily, checking frequently to ensure even browning.
