Green
Tea Pepper Sauce

Chang Compestine, author of Secrets of a Healthy Asian Kitchen,
shares recipes that incorporate green tea.
Note: To steep green tea properly, you must first warm the pot
before adding tea and boiling water. Steep leaves for three to
five minutes. If the tea is going to be used for cooking, make
it stronger than you would for drinking.
This sauce can be used as a dip or as a marinade or spread for
breads and sandwiches. It will keep for about five days in the
refrigerator.
1 cup roasted red bell pepper
1/2 cup brewed green tea
2 Tbs. sun-dried tomatoes
2 Tbs. rice vinegar
2 cloves garlic
1 Tbs.olive or canola oil
1/2 Tbs. white pepper
Preparation:
Combine all ingredients in a blender and mix well. To use with
fish, marinate before cooking. For grilling, just brush on meat
while cooking.
