Green Tea and Orange Smoked Salmon

Oily fish such as salmon contain omega-3 fatty acids, which can protect against heart disease, help maintain vision by protecting the retina and help brain cells transmit electrical signals. Because our bodies don’t produce omega-3 fatty acids, we must obtain them from foods or supplements. Other foods, containing omega-3 fatty acids are leafy vegetables, canola oil and nuts. Give you body a nice boost with this dish.

Smoking the salmon over green tea, raw rice and orange peel gives this disk a wonderful flavor. It is also a low-fat way to cook salmon.

2 pounds skinless salmon fillets
1/2 cup green tea-ginger sauce
1/2 cup Thai sauce for serving, optional

For Smoking
3 large lettuce leaves
1/3 cup loose green tea or contents of 6 Bromley Green tea bags
1/2 cup raw rice
2 tablespoons sugar
1/2 cup chopped fresh orange or lemon peel

Green Tea-Ginger Sauce
1/2 cup brewed green tea
1/4 cup finely shredded ginger root
1/4-cup rice wine or dry sherry1/4 cup rice vinegar
1-tablespoon fish sauce
1 teaspoon sesame oil
1 small green onion, green and white parts, minced
4 cloves garlic, minced
1/4 teaspoon minced red chili pepper (optional)

Mix all the ingredients in a small container. Use immediately, or cover
and store in the refrigerator for up to 2 weeks.
Makes 1 cup.


Cut 1-inch-deep diagonal slashed about 2 inches apart on one side of the salmon fillets. Place the fillets, slashed side down, in a large bowl with the Green Tea-Ginger sauce. Cover and refrigerate for at least 30 minutes, or overnight for the best flavor.

Line the bottom of an old large pan with foil and line the foil with lettuce leaves. Add the green tea, rice, sugar and orange peel, mixing them together on the lettuce.

Please a steamer rack in the pan and place the salmon fillets on it. Tightly cover the pan with foil and a lid. Cook over medium heat for 25 to 30 minutes (depending on the thickness of the fillets), until salmon browns and easily flakes with a fork. Remove from heat before opening. Serve hot with Thai Sauce if desired.
